A brother and sister from Mt Eliza, a hot griddle in Camden Lock Market, and a Dutch street snack the UK had never properly met. This is how Stacked got stacked.
Kane and Jessica Harrison grew up in Mt Eliza, an hour south of Melbourne. Two foodies, one shared obsession with market culture, and a deep family-grade sweet tooth. After both moving to London — Jess via a six-month travel stint, Kane via sixteen — they finally did the thing they'd been talking about for years: opened a market stall.
In January 2013 they pitched up at Camden Lock Market with one product nobody in London was making properly — poffertjes. The bite-size Dutch pancakes that the Harrisons had grown up loving at the markets back in Melbourne. Within months they were open seven days a week.
What started as a single stall became a national rotation — Camden Lock, Southbank Christmas Market, Brick Lane, London Zoo's Sunset Safari, Whipsnade, Ealing Jazz Festival, Notting Hill Carnival, Grand Design Exhibition, Spitalfields, weddings, festivals, corporate functions. Thirteen years of cooking poffertjes fresh, in front of people, exactly the way they were meant to be eaten — together.
Now we've opened our first permanent kiosk at Bluewater. Same recipe. Same toothpicks-and-sharing ethos. Bigger stage.

The Stacked stall lands its longest-running residency — every winter at the Southbank from 2014 through 2021. London Zoo Sunset Safari starts the same summer.

Three things we'll never compromise on — even when it would be easier (and cheaper).
Every poffertje is griddled to order. We don't freeze, we don't pre-batch, we don't reheat. If we can't make it fresh today, we don't serve it today.
We don't do sad portions. We don't do "you can have one topping." Life's hard enough — your treat shouldn't be apologetic.
Open kitchens, no theatre curtains. Watch the pan, watch the flip, watch the sauce hit the stack. It's half the fun.
